I’m in the kitchen almost daily; either cooking a meal at home, at one of the restaurants helping my team or catering at someone’s home. I have found that the meals I enjoy consuming the most are the ones that are also the easiest to make. At home, I go out of my way to cook using locally sourced ingredients which guarantees freshness.
This month, I would like to share with you my very easy to make hummus recipe. I usually make pita bread at home or I cut up carrots to dip in the hummus. I always have hummus in my fridge because it easy to make, it’s a healthy treat and I can find all the ingredients in Addis!
Ingredients
2 cups of boiled chickpeas
½ cup of tahini (sesame paste)
2 tablespoons (and 1 teaspoon) of extra virgin oil (but any oil will do)
3 tablespoons lime juice
3 tablespoons of water (if needed)
2 cloves of garlic
½ teaspoons of salt
1/2 teaspoon of chopped parsley (for garnish)
Preparation
It’s an easy one step process! Put all the ingredients (except the water, the parsley and the 1 teaspoon olive oil) in the blender and process until it’s smooth. Add as much water as necessary until you have the consistency you desire.
Spoon the hummus into a bowl and drizzle over one teaspoon of olive oil and sprinkle on parsley for garnish. Serve with pita bread, crackers, carrots or celery sticks.
