Cook at the Lime Tree.
I’m in the kitchen almost daily; either cooking a meal at home, at one of the restaurants helping my team or catering at someone’s home. I have found that the meals I enjoy consuming the most are the ones that are also the easiest to make. At home, I go out of my way to cook using locally sourced ingredients which guarantees freshness.
YASSER’S FAVORITE INJERA SNACK RECIPE
CREATE THE SAUCE:
INGREDIENTS
MIX TOGETHER
- 1/4 CUP OF WATER
- 1/2 TEASPOON OF BERBERE
- 1/3 CUP OF DICED TOMATOES
- 2 TABLESPOONS OF CHOPPED ONIONS
- 2 TEASPOONS OF LIME JUICE AND
- 3 TABLESPOONS OF BOILED CHICKPEAS
- SEASON WITH SALT TO TASTE
PREPARATION
ASSEMBLE THE FITFIT:
Cut up 1/3 of an injera into small bits (roll and cut) and combine with the above mixture
Garnish with green chili (optional)
Serve Chilled
